My Perfect Cookie

I have a favorite cookie, the Mexican Wedding Cake, but it is rather dry and dense. My goal was to create a cookie with the same great taste that would be a little lighter and fluffier.


  • 2 cups all purpose flour
  • 2 sticks salted butter
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 1/2 tsp lemon zest
  • 1/2 tsp baking soda
  • 1 medium egg white

Combine butter, powdered sugar, vanilla and almond extract and blen until smooth. Grate is lemon zest and add egg white. Give it a quick mix until it's blended. Combine the flour and baking soda give it a stir and slowly add it to the wet mixture.

form dough into 1.5 inch balls and place 2-3 inches apart on an ungreased baking sheet and cook at 325 degrees for 15 minutes.
